In fact, unless the grapes are grown in the Champagne region of France, a producer cannot legally call their wine “Champagne”, regardless of whether they process the wine in the Champenoise method. On first pour, you will notice an abundance of tiny bubbles that seemingly last forever.
The nose is generous with notes of citrus, including pink grapefruit, lime and mandarin. The palate is fresh complex and perfectly well-balanced. We recommend pairing with citrus grilled fish, asparagus or scallops.
